Icing 101

So here it is...icing in all it's glory! In my opinion this is the worst part about decorating cookies. Making the icing. The BIG batch not so bad, you put all your ingredients (in the correct order of course) into your Kitchen Aid and it pretty much does the work for you. But then you have to mix all your colors and put them into the containers of your choice.



As you can see from the picture, I am a "bottle baby" (don't they look pretty?). I think that most cookiers (and this is purely speculation) "pipe" their cookies using regular piping bags and then sometimes flood with the bottles. I do it ALL with bottles, using the same consistency for both piping and flooding. It could be because I have never had any formal training, but whatever the reason, I just know that this is what works best for me. I can use the piping bags, but I feel I have more control holding the cookie with one hand and decorating with the other.

Can I just say that I LOVE these bottles. You will probably only find them locally in a specialty cake decorating store, but via the internet I recommend Karen's Cookies...she has an awesome supply of all things "cookies" and she ships really fast!

Because the bottles have a "coupler" you are able to put on any size tip that you like and with the wide mouth they are quite easy to fill. I should add that I am not a huge fan of the plastic tips that actually come with these bottles, I use metal ones in place of. Another cool thing is they come with a regular lid as well, so you aren't ready to use all the icing at once, just put the lid on for easy storing.
